Located in what was once home to the first Florida Power and Light Ice Plant built in the early 20th century, the owners of the St. Augustine Distillery loving restored this one-of-a-kind building to produce its one-of-a-kind spirits.

On one of the free daily tours, you’ll get a peek behind the curtain to see the making of the Distillery’s award-winning spirits – and you’ll even get to taste a few.  And now you can be among the first to discover The Saint

Introducing The Saint
The St. Augustine Distillery’s newest product is like holding a bit of history in your hand. Its new release is the world’s first barrel-finished Old Fashioned Bourbon aptly named The Saint.

The journey starts with the freshest, locally sourced, corn wheat and barley cooked, fermented and distilled in the award-winning, historic St. Augustine Distillery. The new whiskey then ages for up to 48 months in custom barrels, made from select New American Oak, charred and toasted for aging specifically in the Sunshine State. This is the foundational bourbon that begins the journey of The Saint.

After emptying the bourbon barrels, they are recycled and filled a second time with the distillery’s St. Augustine Old Fashioned Mix (TM), allowing them to rest for an additional four months. After emptying the Old Fashioned mix filled barrels, those same barrels are then re-cycled a third time and filled with the oldest stocks of Bourbon.

Unfiltered and untouched, you are about to experience barrel strength, old fashioned finished bourbon - the first of its kind.

Highly recommended for the first tasting, is to serve it neat in a rocks glass. As your palate acclimates to the high proof alcohol, add a minimal amount of cold water or a single, large format ice cube to suit your taste.

The distillery is located at 112 Riberia Street, St. Augustine.
